Grippo's Chicken Quarters

   One of the cheapest ways to buy chicken is often a bag of quarters. Sometimes I can find them for 10 lb. for $5. Who can resist 50 cents per pound on any kind of meat? So with chicken quarters to spare, I decided to use some Grippo's BBQ chips for a coating. I've used the BBQ chips on chicken breasts and pork tenderloins, so I didn't think quarters would be a far stretch.
   This turned out to be really easy and the chicken was moist in the center, but had a nice spicy crunch on the outside.

Grippo's Chicken Quarters
4 chicken quarters
1 tsp. crushed black pepper
1 tsp. kosher salt
2 cups Grippo's BBQ chips, crushed to make 1 cup

Heat oven 375 degrees. Spray large baking sheet or 2-11x9x2 baking dishes.
Crush chips in large plastic freezer bag.
Lay chicken in baking dishes and drizzle with olive oil, spreading to coat both sides. Sprinkle with pepper and pepper.
Dip each chicken quarter in crushed chips and coat well.
Bake in 375 oven for 1 hour to 1-1/4 hours. Cover loosely with foil if coating gets too crispy.
