Bacon Wrapped Baked Potato

    I LOVE a baked potato. There are just so many ways you can flavor up a spud. One of the tricks I didn't think about for years was wrapping them in bacon. I don't know how I missed that idea. It's so very simple, but just takes the flavor right over the top. This is a little trick anybody can easily do. 

Bacon Wrapped Baked Potatoes
2 large Idaho baker potatoes
2 strips of bacon
kosher salt
cracked black pepper
2 pieces aluminum foil

Preheat oven to 350 degrees.

Tear foil into 10-12 inch squares. Place potatoes in center of each.
Wrap each potato with bacon starting at one end and tucking under at the end.
Sprinkle with salt and pepper then roll in foil, wrapping edges towards the center.

Bake for 45-60 minutes depending on size of potato. 

With an oven mitt on your  hand, squeeze potatoes for firmness. When easily squeezed, they are done. Unwrap, butter if desired and enjoy. Serves 2.
