Baked Potato Bites

Baked potato bites with dinner.
    Looking for a new way to do the same old potatoes? Need a quick and easy side dish for dinner? Here's the answer - baked potato bites. Instead of popping the whole spud in the oven, cut your potatoes into 1/2- inch slices and bake. How easy is that? This would also be a great finger food to feed a crowd that doesn't take a lot of work or ingredients.

Baked Potato Bites
2 large (Idaho) baker potatoes, sliced in 1/2-inch rounds
2 T. butter, melted
Kosher salt

pepper
1 tsp. paprika or dry rub seasoning (optional)
2 bacon slices, cooked, crumbled and torn into bits
1/2 cup shredded cheddar cheese
optional - sour cream for dipping

Preheat oven to 400 degrees.
Coat medium baking sheet with cooking spray.

Potatoes ready for oven.

Brush both sides of sliced potatoes with butter and place on a cookie sheet. Sprinkle with salt, pepper and paprika or dry rub, if using.

Bake for 25 to 30 minutes, flipping after 12 minutes. Cook until lightly browned on both sides.


Remove from oven and sprinkle with cheese and bacon crumbles. Turn oven off and return to warm 5 minutes for cheese to melt. Serves 2-3. Recipe easily doubled.
