Southern Grillin' Dry Rub

   One of my favorite places in the kitchen is the spice rack. This is where the flavor is and adding some flavor is what a dry rub is all about. 
   The base ingredients to most dry rubs are paprika, salt and pepper. After that, the variations are boundless and that's where the fun begins.
  Spice blends and dry rubs are very easy to make at home. I save small glass jars for just the occasion. They store well for months. 

Southern Grillin' Dry Rub
1/4 cup paprika
2 T. cayenne pepper           
1 T. ground cumin          
2 T. Kosher salt                  
2 T. ground pepper          
2 T. light brown sugar (dark is OK, too)


Mix all ingredients in small bow with fork. Stir and break up brown sugar pieces until well blended. Store in airtight container.

(This spice blend was also good on baked home fries for a new twist.)
