Mini Turkey Day Parfaits

    When you're down to the last little tidbits of Thanksgiving food, this little dish will put all of those wonderful flavors into one bite. I got this idea from a festival that offered a BBQ Parfait - layers of mashed potatoes, topped with pulled pork and sprinkled with cheese. It was wonderful. 

   For months now I've been toying  with the idea of combing the turkey and sides together in some combination. I thought of making a "Turkey Day Saucheesie" with the main ingredients all rolled into one soft dough pastry, but never quite got the details worked out in my mind. However this Turkey Day Parfait is perfect for layering all of the goodness of Thanksgiving into one small serving.

Mini Turkey Day Parfaits
(per serving)
1/4 cup mashed potatoes
1/4 cup cooked turkey, diced
1/4 cup dressing
2 T. turkey gravy
2 T. or 1/8 cup cranberry sauce

In microwave, warm potatoes, turkey and dressing on a plate in 3 piles. Cook about 2 minutes until warm, stirring as needed. Heat gravy separate.


In a 6 oz. pudding dish or similar dessert glass, layer all ingredients in order listed, potatoes, turkey, dressing and then gravy. Heat an additional 30 seconds in microwave if needed. Top with cranberry.
