Grippo's 57 Meatloaf and Broccoli Cheese Stuffed Potato. |
Whenever I make meatloaf it comes out different every time. What ingredients I have on hand is what goes in the meatloaf. It's almost like soup, a little of this and a little of that.
For this meatloaf I wanted to try something new - substituting Grippo's chips for bread crumbs and Heinz 57 instead of ketchup. I thought this variation would boost the flavor and I was right. The bacon keeps the meat moist and adds a nice touch all on it's own, but the steak sauce and chips really make this an easy, memorable dish.
Grippo's 57 Meatloaf
2 lb. ground beef
1/2 medium onion, diced
1 clove garlic, diced
1/2 green bell pepper, diced
1/2 bottle of Heniz 57 sauce, saving some for topping
2 T. Worcestershire sauce
1 T. parsley
1 cup Grippo's potato chips, crushed
1 egg, beaten
3 slices bacon
salt and pepper
Preheat oven to 350. In a large bowl combine all ingredients except bacon. Mix well.
Pour mixture into greased 13x9x2 inch baking dish. Shape into a loaf. Pour a thin layer of Heinz 57 over top of loaf. Layer bacon over top lengthwise.
Bake 30 minutes and then drain excess grease. Return to oven and continue baking 15-20 minutes.
Serves 4-6.
