Loaded Baked Potato Salad

     When you visit a BBQ joint one of the most common sides is potato salad. After visiting a really nice local BBQ place, I decided to try and make my own loaded potato salad. That's when you take all of the ingredients of a loaded baked potato and make it in salad form, all tossed together in a bowl.
    This tastes just as good as it sounds and I love a baked potato with all of the fixings. Give me carbs and calories, I don't care. Bring on bacon, cheese and sour cream, I'm just fine with that. This potato salad has all of that but is sized down for a few instead of a crowd.

Loaded Baked Potato Salad
4 medium potatoes, boiled, skinned and chopped
4 slices bacon, cooked and crumbled
3/4 cup sour cream
1/2 cup salad dressing (like Miracle Whip)
1/4 tsp. Kosher salt
1/2 tsp. pepper
1-1/2 tsp. chives
1/2 cup cheese, shredded

* optional - 1/8 tsp. celery seed

Combine all ingredients in order listed in medium mixing bowl. Mix well. Taste and adjust salt and pepper as needed.

Chill in covered container for at least 1 hour to meld flavors.

Serves 5-6.


(To make this low fat use turkey bacon and fat free salad dressing, sour cream and cheese.)
