When the kids were little I used to do a lot of baking, especially cookies. One of their favorites was a cookie very similar to snicker doodles. These are a light butter cookies that store well. I would freeze them and stock up to give these as Christmas gifts. Lots of people got homemade goody bags when I didn't have a "real" full time job - like motherhood isn't?? Ha!
Cinnamon S's
Preparation time: 25 to 30 min.
This is a butter cookie that is lightly coated with cinnamon sugar, twisted into an "S" shape and baked just until set. Ideal for holiday cookie trays, they are also a nice accompaniment to pudding or fruit desserts.
For 6 dozen cookies you will need:
1 cup butter or margarine
1 cup sugar
2 eggs
2-3/4 cups all-purpose flour
1 tsp. baking powder
2 tsp. cinnamon
2 Tbsp. sugar
Preparation:
1 - Cream butter and sugar. Add eggs and beat until light. Stir in flour and baking powder to make a pliable cookie dough. Chill for 30 minutes. if necessary or shape immediately.
2 - To shape, divide dough into 6 equal portions. Roll each portion out to make a rope 24 inches long. Divide into 2-inch strips.
3 - Roll strips in a mixture of the 2 tsp. cinnamon and 2 Tbsp. sugar. Twist into an "S" shape and place on cookie sheet. Repeat for all of the strands of dough.
4 - Bake at 375 for 10 to 12 minutes or until cookies feel firm but are not browned.
