One of my all time favorite sides is a good baked potato with the works - butter, sour cream, bacon bits and cheese. I can, and have, made meals just out of potatoes. A lady I worked with gave me the idea for wrapping the potatoes in bacon while cooking years ago. It's been great. Yeah, there's just something about bacon that makes almost everything better. So even though this sounds plain and simple, it is tasty. Good tips are never a bad idea, no matter how simple it may sound. Just give it a try.Deluxe Baked Potatoes
2 large baking potatoes
2 pieces of bacon
kosher salt
cracked black pepper
Preparation -
Preheat oven to 350. Wash potatoes and poke lightly a few times with knife. Tear two sheets of foil in square. Wrap potatoes in bacon, then sprinkle with salt and pepper. Wrap tightly in foil and bake until soft when squeezed, 60-90 minutes.
Good of course with butter, sour cream and chives, but we went outside the box one night and used jalepeno chip dip instead of sour cream and topped with cilantro instead of chives. oh yeah. But the best part is the basic yum combo of bacon and potato - 2 of my absolute faves.
