Fiesta Meatloaf
2 lb. ground beef
2 diced garlic cloves
1/2 cup diced onion
2 bread slices torn in bits
1/2 diced green bell pepper
1/2 diced red bell pepper
2 eggs
1 t. cumin
2 t. paprika
1/4 t. crushed red pepper flakes
1 t. salt
1/2 t. pepper
1 T. chili powder
1 T. chopped cilantro
2 T. Worcestershire sauce
1/2 cup ketchup or hot BBQ sauce
3 slices bacon
sprinkle of cracked black peppercorns
(Note-good served with a garlic mashed potatoes and corn)
Preparation -
In a large bowl combine beef, bread, garlic, onion, peppers, spices, Worcestershire sauce, egg and ketchup (or BBQ). Mix well. Preheat oven to 350. Spray 13x9x2 baking dish. Pour meat mixture into pan and shape into loaf. Layer the top with bacon slices and sprinkle with cracked black pepper. Cook 45 minutes then drain off any liquid. Cook another 30 minutes or so until done.
(Recipe can be made ahead. Follow directions above and cook for 45 minutes, drain, then cover with foil. Cool slightly, then refrigerate until ready to use. Preheat oven and cook, covered 45 minutes. Let set for a few minutes before slicing.)
