At work a few years back we upgraded our printing system and Kodak sent the BEST trainer to try and teach me to use PC software after being a devoted Mac user for years. Her patience was incredible and we became friends. Recently she sent me one her of favorite easy recipes - she called it a "danced up box dinner" - love it. So I made it last night for my crew and they really liked it - thought I would pass it on to you.A-Roni con Pollo
1 box Rice-A-Roni Chicken Garlic
2 T. butter
1-3/4 cup water
1 small diced onion
1/4 cup salad olives
1 can diced tomatoes with green chilies - undrained
1 package skinless boneless chicken thighs (can use breasts)
Chicken seasoning blend (can use taco seasoning, garlic salt, any blend of chicken seasoning, Mrs. Dash, whatever is on hand)
Saute onion in butter for a minute or two, then add rice-vermicelli and saute until onions are fairly cooked and vermicelli is golden brown. Stir in water, seasoning mix from Rice-a-Roni, tomatoes, and olives. Place chicken on top, sprinkle with seasoning blend. Bring to boil on med-high, then cover and reduce heat to low. Simmer for 20-30 min, until rice and chicken are done. If there is any liquid left, cook uncovered on med-high until it is absorbed (just a few minutes, stirring often).
