I ran across a recipe for Cajun Potato Salad awhile back that I'd been wanting to try - so last weekend I gave it a whirl. I thought it sounded like a good blend of flavors and easy. It helped that potatoes were on sale. I wasn't sure about the relish, but that turned out OK. Don't be afraid of the cayenne, it's not the ultimate hot pepper - but it does give a bit of zing. I like a new twist on a classic stand by.Cajun Potato Salad
Ingredients
4-5 medium potatoes
1 t. salt
1/4 t. pepper
1 T. cayenne pepper
10 drops hot sauce or Tabasco (optional)
1 T. Cajun spices
1 lb. bacon, cooked and crumbled
1/2 t. celery seed (or 1/4 cup diced celery)
1/2 cup minced onion
1/4 cup pickle relish
1/3-1/2 cup mayonnaise or salad dressing
1 T. yellow mustard
Directions
Chop the potatoes into bite-size pieces. Drop in cold water and add a some salt. Bring to boil and cook until fork tender, about 20-25 minutes. Drain 1/2 the pot and pour into a bowl. Season with salt, pepper and half of cayenne. Drain the other 1/2 of the potatoes and pour on top of the first half. Season with salt, pepper and cayenne. Crumble bacon into the salad. Add onion, relish, mayo and mustard. Stir well to combine and refrigerate until ready to use. Refrigerate for at least 2 hours before serving.
