Carrot Cookies

When my kids were little I tried hard to be a "good mother" and make sure they got the four food groups, no soda, no caffeine and all that healthy stuff. Once I'd gotten a great deal on 5 pounds of carrots and wondered what to do. I discovered a carrot cookie recipe that was a snack for the kids and healthy as well. The kids thought they were great and they are so moist. It's an easy cookie recipe and you're sneaking some good stuff in on them. What could be better?

Carrot Cookies
1/2 lb. butter or margarine
1 cup sugar
1 cup cooled cooked carrots, mashed
1 egg
1/2 t. vanilla
1 t. cinnamon
1/4 t. ginger
1/4 t. allspice
1/4 t. nutmeg
1 T. grated orange rind (optional)
2 cups flour
2 t. baking powder
1/4 t. salt

Preheat oven to 350.
 In large bowl, cream butter until light and fluffy, and sugar gradually, beating after each addition. Mix in carrots, egg, vanilla, spices and orange rind, stirring well. In medium bowl mix dry ingredients. Gradually add dry ingredients. Drop by teaspoonfuls a couple of inches apart on greased cookie sheets. Bake 12-15 min. until firm but not brown. Let cool for a minute before transferring. Makes 5 dozen.
