Looking for a new way to dress up an old favorite? Try adding taco seasoning to your burgers. Soon it will be time to clean off the porch, break out the grill and then the cooking adventures begin. One of the new combos we found last summer was making taco burgers and then topping them with guacamole. It adds a creamy burst of flavor that brightens up every bite.
Taco Burger
1lb. ground beef
1 pkg. Taco seasoning
Mix meat and seasonings until well combined.
Let chill for at least 15 minutes to let flavors absorb.
Make patties and cook as usual. Top with pepperjack cheese and guacamole.
Guacamole
6 grape tomatoes, seeded and diced fine (or 3 Romas)
1/4 cup onion, diced fine
2 cloves garlic, minced fine
2 avocados
2 T. lime juice
2 T. cilantro
1/4 tsp. crushed red pepper flakes
1 tsp. chili powder
1/2 tsp. cumin
2 T. sour cream (not heaping)
salt and pepper to taste
splash of hot sauce if you're up for it
Cut tomatoes, onion and garlic. Cut avocados in half, removing pit and with spoon scoop in medium bowl . Smash avocado with fork, a little chunky is OK. Add lime juice right away. Stir in diced veggies and spices. Mix well to blend. Add sour cream last, stirring just enough to mix and make creamy.
Chill at least one hour. (Tip - plastic wrap right on dip will help prevent browning)
Makes about 1 cup.
