Easy Peach Cobbler

   The family was coming for a holiday dinner and I needed a dessert for those with a sweet tooth. I found peaches in the freezer and decided it was their time. I thought of peach pie or a peach crisp, but didn't have the makings on hand. What I did have in stock was the simple, basic ingredients for a cobbler. I must say, it's been awhile since I tried one of those.
   This turned out to not only be very easy, but with that hint of cinnamon, very good. I made it a little ahead of time to free up oven space, but it stayed warm covered in foil and hit the comfort spot just right. A dollop of whipped topping or ice cream would have made it perfect.

Easy Peach Cobbler
8 tablespoons butter (1 stick)
4 cups frozen peaches, sliced, peeled and thawed
2 cups sugar, divided
1/2 cup water
1-1/2 cups flour
2-1/4 tsp. baking powder
3/4 tsp. salt
1-1/2 cups milk
sprinkle of ground cinnamon, optional

Directions -
Preheat oven to 350 degrees. Put the butter in a 3-quart or 11x9x2 baking dish and put in oven to melt. When melted, remove from oven.

Combine peaches, 1 cup sugar and water in a medium saucepan and stir well. Bring to a boil and simmer for 10 minutes. Remove from heat.

In a small bowl, combine remaining 1 cup sugar and flour. Stir in milk slowly to prevent clumping. Pour mixture evenly over melted butter. Don't stir. Spoon fruit with syrup on top. Sprinkle with cinnamon.

Bake for 40 to 45 minutes. (Batter will rise to top during baking.) Serves 8-10.
