There's a new burger in town, or at least at my house. The bacon chipotle burger that has bacon right in the burger. I just had to try it. It's one of those things that I've seen but hadn't tried yet, crumbling bacon and mixing it in the burger. Why not? It keeps the bacon from falling off.
A new flavor that I've become partial to lately is chipotle. I had a can that I'd used part of and felt compelled to find a use for the remainder. I thought a smoky bacon burger covered in cheese would do just fine. The combination of the peppers and the bacon worked well together to give it just a little kick but still a good flavor. My crew was all in for it.
Bacon Chipotle Burgers
1 lb. ground beef
2 chipotle peppers in adobe sauce, diced
2 slices bacon, cooked (not crisp) and crumbled
sprinkle of hamburger seasoning
salt and pepper
4 slices pepperjack cheese
8 slices Italian bread, toasted if desired (or Texas Toast)
garnish - mustard, lettuce, onion or condiments of choice
Preparation
In small bowl combine ground beef, chipotle peppers, bacon, salt and pepper. Form into 4 patties.
Sprinkle outside of patties with hamburger seasoning and cook in hot skillet 4-5 minutes per side.
Top with cheese and cover skillet with lid to let cheese melt while assembling buns. Makes 4 burgers.
Options - while burgers are cooking, add sliced peppers and onions to pan so they can saute' and soften. Put on top burgers before adding cheese so they are melted to the top.
