Guilt Free Banana Pudding

Guilt Free Banana Pudding
                                                    by Derek McGraw, PPD

For anyone with a sweet tooth that's trying to watch their calories, this dessert is light and creamy without being packed full of sugar. When my hubby tasted this, he "highly" suggested that I try it. I've learned that he is a wise man. There wasn't any taste of sugar substitute or fat free ingredients. This was just a perfect creamy pudding with a touch of wafer crunch.

1-8 oz. pkg. fat free cream cheese
1-14 oz. can fat free condensed milk
1-3 oz. pkg. instant sugar free vanilla pudding mix
3 cups cold skim milk
1 tsp. vanilla extract
1-8 oz. container frozen light whipped topping, thawed
4 bananas, sliced
1/2 (12 oz.) pkg. reduced fat vanilla wafers

In a large bowl, beat cream cheese until fluffy. Beat in condensed milk, pudding mix, cold milk and vanilla until smooth. Fold in 1/2 of the whipped topping.

Line the bottom of a 9x13 inch dish with vanilla wafers. Arrange sliced bananas evenly over wafers. Spread with pudding mixture. Top with remaining whipped topping. Allow to chill for at least 3 hours.  Serve 12.
