Strawberry Pie

Photo courtesy of the Cooking Corner

Without a doubt, strawberry pie is my favorite of all desserts, even more than cakes or cookies. I love the fresh bright flavor of the berries in contrast to smooth, sweet cream. This pie has it all - it's cream topped on a sweet berry filling over a flaky crust.
I tried this at the Beadle Bunch's Relay for Life dinner a few weeks ago and am grateful that the ladies shared the recipe. I brought a piece home to share with the hubby, next time, I might just get a whole pie. This one is a keeper.

 Ingredients -
2 pints strawberries
1 pkg. Wicks Strawberry Glaze
1-8 oz. pkg. cream cheese, softened
3/4 cup powdered sugar
2 baked pie shells
whipped topping, thawed

Preparation -
Mix cream cheese and  powdered sugar until smooth. Spread cream cheese mixture into bottom of a baked pie shell. Add strawberries with glaze mixture. Top with whipped topping.

Note - There should be enough strawberries for 2 pies, but cream cheese mixture only makes enough for 1 pie.
