BBQ Bacon Meatloaf

      In my kitchen, meatloaf is one dish that can come out differently every time. It just depends on what's on hand and what flavor suits the mood. For this adventure, the meatloaf is "amped up" with BBQ sauce and the flavor of bacon. There's a little BBQ sauce in the meat and a nice layer on top of the bacon. By using ground chuck, there is very little to drain off and the texture is more dense and filling. Each slice has a nice smoky, bacon flavor that just melts in your mouth.

BBQ Bacon Meatloaf
Meatloaf out of the oven.
2 lb. ground chuck
1 egg
1/2 small onion, diced
1/2 green bell pepper, diced fine
2 slices bread (heels), torn in bits
1-2 T. Worcestershire sauce
3/4 cup BBQ sauce, divided (1/4 cup mixed in meat, 1/2 cup topping)
1 tsp. paprika, smoked if possible
1 tsp. salt
1/2 tsp. ground black pepper
2 tsp. BBQ seasoning (McCormick's)
3 slices bacon

Preheat oven to 350. Spray coat a 13x9x2 baking dish.

In a large bowl combine all ingredients except bacon and reserved BBQ sauce.
Mix well until thoroughly combined.

Pour into casserole and shape into loaf. Top with bacon.

Bake 45 minutes and drain excess liquid (if needed). Pour BBQ sauce on top and spread over bacon. Return to oven for 30 minutes more.

Remove from oven and let sit for 15 minutes before slicing. Serves 5-6.
