Green Beans and Potatoes

    Some dishes are just family classics. This version of green beans and potatoes is a staple at every family holiday dinner. What really makes the flavor is bacon and cooking the beans and potatoes in beef base. Even though this seems too easy for a recipe, you never know when a beginner cook might need a little help.

Green Beans and Potatoes
1 lb. green beans (canned and drained)
1 large potato, cut in 1-inch chunks or large cubes
2 strips bacon, cooked and crumbled*
1/2 small onion, sliced or quartered
cracked black pepper
Kosher salt
1 cup beef base

Combine all ingredients in large saucepan. Bring to boil, cover and then reduce to simmer until potatoes are tender, about 45 minutes to 1 hour.


The longer these simmer, the better the flavor, so it won't hurt to let them cook on the back burner for a few hours, (as long as they don't boil dry). Serves 6.

* For the "old school method", cook bacon in pan first and then add other ingredients right in with the bacon grease. Heart healthy? No. Added flavor? Yes.
