Asian Marinated Cucumbers
1 large cucumber
1 tsp. kosher salt
1 T. red wine vinegar
2 tsp. sugar
2 tsp. soy sauce
1/2 tsp. sesame oil
2 T. green onion tops, sliced
1 clove garlic, minced
pinch red pepper flakes
chopped cilantro or parsley for garnish
Peal and slice cucumber. Put slices in a small bowl and sprinkle with salt. Set aside for at least 10 minutes.
In larger bowl, mix all other ingredients.
Drain cucumbers and add to dressing mix. Sprinkle with cilantro or parsley.
Cover and refrigerate until chilled, at least 30 minutes.
Serves 4.
