Quick breads are quick to my way of thinking, because they are easy to assemble with a few basic ingredients. However the variety of flavor options are endless.
This is a basic quick bread where honey is substituted for some of the sugar. The bread has a light flavor, toasts well and is great with a jam or butter. It's simple yet versatile.
Honey Quick Bread
1-3/4 cups flour
1-1/4 tsp. baking powder
1/2 tsp. salt
1 stick softened butter
1/2 cup sugar
1/4 cup honey
2 eggs

1-1/2 tsp. vanilla
1/2 cup milk
Preheat oven to 350.
In medium mixing bowl, combine flour, baking powder and salt. Set aside.
In large mixing bowl add butter and sugar. Whip with mixer on medium speed until light and fluffy. Gradually add in honey and combine well.
Add eggs, vanilla, beating well.
Slowly add dry ingredients and mix until well combined. Pour into sprayed 9x5 inch loaf pan.
Bakes 55-60 minutes. Insert thin knife to check if done. The knife should come out clean.
Let cool 1 hour in pan. Run knife around edge of bread and then invert onto plate to cool.
Drizzle honey over warm bread while cooling on plate.
Serves 8-10.
