Sugared Cranberries

Photo courtesy of the Cooking Corner.
So what can you do with extra cranberries? One of the simplest ideas that I've come across is to sugar them.
First they are soaked in sugar water and then rolled in sugar to dry. This is almost like a homemade fruit candy made with natural ingredients.
I added these to a snack mix for a unique treat, but they would be excellent in breads, muffins, on cereal or included in a granola mix. Options are good.

Sugared Cranberries
1/2 cup water
1 cup sugar, divided
2 cups cranberries, fresh

Cranberries soaking in sugar water.

In small saucepan, pour water and 1/2 cup sugar. Bring to boil, stirring occasionally to dissolve sugar.

Pour sugar water over cranberries and let sit 1 hour to cool. Drain.

Sprinkle sugar on cookie sheet. Roll cranberries in sugar and let dry for 4 hours.

Store in airtight container. Good as an appetizer or in other dishes.
