Roasted Parmesan Red Potatoes

Roasted potatoes out of oven.
    Our Navy girl came home for a visit recently and completely spoiled me with her cooking. One of her big brothers just fell in love with this potato dish. The Parmesan cheese gives the spuds a nice, light crust and it's very easy to make. So before she headed off to her new station on the East Coast, I made sure to get the scoop on how to do this tasty side dish myself. Now you can do it, too.


Ingredients
Roasted Parmesan Red Potatoes
4 medium red potatoes, quartered
2 T. olive oil
1/4 cup onion, minced

3 cloves garlic, minced
1/4 cup Parmesan cheese, plus 1/2 cup for topping

Preheat oven to 400.
Spray coat a 13x9x2 baking dish.
Combine all ingredients (except 1/2 cup Parmesan reserved for topping) in large plastic bag and shake to coat.

Bake 400 degrees for 35 minutes. 

Stir after 20 minutes and top with remaining Parmesan.

Serves 4-5
Potatoes ready for oven.
