Mini Bacon Cheese Balls

    Cheese balls are one of my favorite appetizers. For a recent bacon themed party I made mini versions of your classic cheese ball rolled in bacon bits. These were your basic cheese balls rolled about the size of a golf ball. The texture was nice once they firmed up a little in the fridge, but the hubby suggested scaling them down a bit so they could be popped in your mouth in one bite. That sounded good to me. These were handy little bites.

Mini Bacon Cheese Balls
8 strips bacon, cooked and crumbled (reserving 1/4 cup)
1-8 oz. pkg. cream cheese, softened
1 T. Dijon mustard
2 T. lemon juice
1 cup cheddar cheese, shredded
1/8 cup chives or parsley

Mix cream cheese, cheddar cheese, bacon, mustard and lemon juice until well blended.

Form into small balls about the size of a quarter. Chill at least 15 minutes.

Roll in reserved bacon and sprinkle with chives or parsley. Refrigerate until needed. Makes about 18. (If rolled in 1-inch balls, will make 12 cheese balls.)
