Over the years I've tried various bacon ideas - bacon mixed in the burger, topping a burger and even deep fried bacon. So it wasn't a far stretch to think of a brat wrapped in bacon. The brats are cooked on the stove in a liquid (my choice was beer) so that they don't dry out. Wrapping them in bacon was a little trickier than I thought, but successful none the less. Gently move them around to brown the bacon on all sides while on the grill and then pull them off and eat. Microwaving the leftovers wasn't the best option since the bacon gets a little soggy, so I'd recommend the oven for that chore. But this was an interesting taste test anyway.
Bacon Wrapped Brats
4-5 smoked bratwursts
1/2 small onion, sliced
1/2 bell pepper, sliced
1/2 cup beer or water
4-5 slices bacon
Place brats in skillet with lid on stove. Add sliced onion and peppers. Pour in liquid, cover and simmer 30-45 minutes. Turn off, crack lid and let cool 15-20 minutes until you can handle easily.
Preheat grill to 275 degrees. Wrap bacon around each brat, tucking ends under bacon strip. Remove veggies to plastic container to use as topping.
Cook over low flames, turning often until bacon is cooked to desired doneness. Best eaten warm right off the grill. Serves 4-5.
