Memphis Rubbed Bacon Wrapped Pork Chops

Memphis chops with a broccoli cheese stuffed potato.
    One of our favorite cuts of pork is the boneless chop wrapped in bacon. Our local store calls them prime cuts. They are very reasonably priced and if I can catch them on sale, it's a done deal.
  Because they're wrapped in bacon, I usually bake these with a seasoning or dry rub sprinkled on top. It's just so easy and always turns out good. This time I used a Memphis dry rub that a friend gave me and we were very happy with the outcome. Of course, a stuffed potato on the side never hurts either.
  This is a perfect beginner cook recipe or if you're in a rush, it's a good weeknight meal, too.

Memphis Rubbed Bacon Wrapped Pork Chops
2 prime cut boneless pork chops wrapped in bacon
1-2 tsp. Memphis dry rub spice
cracked black pepper

Preheat oven to 350. Spray coat a 9x9x2 baking dish.


Sprinkle both sides of chops with dry rub and pepper.


Put chops in baking dish and cover with foil.


Bake for 20 minutes, flip meat and recover pan with foil. Bake 15-20 minutes more and then remove from oven.


Leave covered in foil until ready to eat. Serves 2.
