Grippo's Baked Chicken

     My husband works with some women who know I cook. They do a great job of forwarding recipes and giving me ideas. We tried one of Charlotte's ideas Sunday night - chicken breasts coated with crushed Grippo's potato chips. It's similar to those recipes using corn flakes, it's just BBQ potato chips instead. It was really easy and the chicken turned out moist inside but with a crunchy coating that had just a little zing.

Grippo's Baked Chicken
6 small boneless, skinless chicken breast
2 T. olive oil
1 bag of Grippo's chips crunched (half of a twin pack)
pepper

Spray 13x9x2 pan with cooking spray. Preheat oven to 375. 

Crush chips and put in large plastic freezer bag. 

Lay chicken breast on baking dish. Drizzle olive oil over chicken, spreading with brush to coat evenly on both sides. Sprinkle with pepper. 

Dip each breast into chips and turn to coat well. 

Bake until golden brown about 20-25 minutes.

Makes 6 servings.

This is an easy Recipe to follow and it is absolutely delicious!!! I have a 6 and a 5 year old daughter and they love to help me make this meal and love eating this chicken after all their hard work.
