Mississippi Mud Cake

Paula Deen is not the only one who can make a Mississippi Mud Cake. My friend, Barb, make this one around the holidays, and she swears, "it's to die for." If you like sweet and gooey, this is what you're looking for. With the holidays approaching, many of us are looking for new things to try, this would be a good one.

Mississippi  Mud Cake
2 sticks butter
2 cups sugar
1/3 cup cocoa
1-1/2  cup flour
1 cup coconut
1 cup pecans
4 eggs, beaten

Melt butter. Put remaining ingredients in bowl and mix well. Pour in melted butter and stir to combine. Bake in greased and floured 9x13 inch pan at 350 for 40 minutes.

Frosting-
7 oz. marshmallow cream.
3/4 stick of butter
1/3 cup cocoa
1/4 cup milk
1/2 box powdered sugar
1 t. vanilla
(optional-chopped pecans for garnish)

Spread marshmallow cream over cake while still hot. Mix other ingredients well and the spread over topping to make icing look like mud.
