Saucy Pizza Rolls

If you are looking for an appetizer that doesn't take a lot of ingredients, or items that you have to go out and buy, this might be a good recipe to try. Lasagna noodles filled and rolled up, turn into pizza rolls. There's only seven ingredients, most of which are common stock in many kitchens. The hardest thing about this is handling those slippery lasagna noodles. I'm thinking a fork might be called for instead of labeling this one finger food.

Saucy Pizza Rolls
8 uncooked lasagna noodles
1 lb. ground beef
1/2 cup chopped onion
6 oz. shredded mozzarella cheese
2.5 oz. jar sliced mushrooms, drained
1 egg, beaten
1/2 cup pizza sauce

Cook lasagna noodles as directed on package. Drain and rinse with cold water. Heat oven to 350.
In medium skillet, brown ground beef with onion; drain. Stir in 1/4 cup of pizza sauce, 1/2 cup cheese, mushrooms and egg. Spread each noodle with generous 1/3 cup meat mixture. Carefully roll up and place seam side down in 8-inch (2 quart) baking dish. Pour pizza sauce  over rolls. Cover and bake at 350 for for 40-45 minutes or until bubbly. Uncover and sprinkle with remaining cheese. Bake additional 4-6 minutes or until cheese is melted. Let stand 10-15 minutes before serving.
Serves 4.
