Tomato Dumplings

Dumplings have always been one of my favorites, ever since watching my grandma make them. One of the guys at work brought in some Tomato Dumplings that his wife makes that were really good. I never would have thought to put that combination together, but it works. She was nice enough to share her recipe with me and I tried them at home. This wasn't hard at all and tasty.

Tomato Dumplings
2 (14.5 oz.) cans stewed tomatoes
1/4 cup bacon grease
2 cups flour
1 tsp. salt
1/4 cup bacon grease
1 1/4 cup warm water
1 T. sugar

Directions: Put tomatoes and bacon grease into large heavy pot and fill half way with water. Bring to a boil.
Dumplings: Mix 2 cups flour, 1 tsp. salt, 1/4 cup meat grease, 1 1/4 cup warm water. Sprinkle about 1 cup flour on your work area. Roll out dough to about 1/8 inch thick and cut dumplings in about 1 inch circles. Drop into boiling tomato liquid.  Add 1 T. sugar to pot and continue boiling over medium heat until dumplings are tender, about 20 minutes or so. Salt and pepper to taste.
