The family gift fairy came one day recently and brought us some Cornish hens. Last weekend we decided to try those little birds, and yeah, little is the word. But the flavor was good and the crockpot made them easy.
Crockpot Cornish Hens
4 Cornish hens, rinsed and patted dry
1 t. paprika
1/4 t. rosemary
1/8 t. thyme
salt
ground black pepper
1/4 sliced onion
2 cloves garlic
1-2 T. olive oil
Sprinkle hens (inside and out) with paprika, rosemary, thyme, salt and pepper. Place in plastic container and refrigerate for a few hours up to overnight. In bottom of slow cooker place onions and garlic. Put hens on top and drizzle with olive oil. Add another light sprinkle of salt and pepper. Cook on low heat in crockpot for 8 hours. (Keep lid on to retain moisture.) Serves 4.
Oven option - bake in 375 oven for 1 hour.
