Smoked Chicken Salad

We smoked a couple of chickens last weekend and had some leftover. Our friends suggested chicken salad. I made a few things with the smoked chicken, but the flavor didn't come out in any of the other recipes the way it did in this recipe. Easy, fast and tasty, what better way to use up leftovers.

Smoked Chicken Salad
3/4-1 cup smoked chicken, chopped into bite size pieces
2 heaping Tb. mayonnaise or salad dressing
3 slices onion, finely chopped
1/2 tsp. garlic salt
1 tsp. paprika
salt and pepper to taste
1/2 t. parsley (optional for color)

Cut leftover smoked chicken into pieces. Add mayo, onion and spices. Stir well to combine. Refrigerate for at least an hour to combine flavors. Makes 4 side dishes or 2 entree servings.
