Potatoes are the number one side dish in my house. They go with just about everything. Sometime I take the easy way out and instead of frying or mashing them, I coat them in a spiced oil and bake them. That leaves me free to do other things and not have a mess to clean up. Any good spice rub or house seasoning will work, but this is one I use on a variety of things, potatoes included.
Baked Potato Wedges
3 medium potatoes, washed, skin on
2 T. vegetable oil
1 tsp. smoky dry rub spice*
salt and pepper, a few shakes of each
(For some heat, add 1/4 t. crushed red pepper and dash of hot sauce to oil mix.)
In shallow bowl, mix oil and spices. Cut potatoes in half, and then slice in long wedges. Coat potatoes in oil and spice mix and put on greased baking pan. Cook in oven preheated to 375 degrees for 15 minutes. Flip potatoes and cook 15 minutes more until done. Potatoes should be lightly browned on outside. Sprinkle with salt while hot.
Smoky Dry Rub Spice
2 1/2 T. paprika
2 T. garlic powder
1 T. onion powder
1 tsp. cumin
1 tsp. cayenne
1 T. oregano
1 tsp. thyme
1 tsp. pepper
1 T. kosher salt
Preparation -
Mix in small bowl and pour into container with tight fitting lid. Saves well in dry place. Makes about 1/3 cup.
