Cucumber salad
4 cucumbers seeded, diced and peeled
1 large red or green bell pepper, diced
4 celery stalks, chopped
1 small red onion, chopped
2 small tomatoes, diced
Dressing
1 cup sugar (works great with splenda)
1/2 cup red wine vinegar
1/4 cup of water
salt and pepper to taste
Cut and dice vegetables. Mix dressing and pour over salad. Let stand 2 hours.
