Yellow Squash Patties

Well, it has been a great year for summer squash. I suppose summer
squash love the summer heat wave that we are having here in the big
town of Princeton, Indiana. This summer, I have been creating many
new recipes using summer squash and other vegetables and I would like
to share one of my favorites with my Gibson County friends.

Yellow Squash Patties  (Summer Squash)

2 cups yellow squash (grated)
1 teaspoon salt
1 egg
1/2 cup all-purpose flour
1 small onion grated

Mix together. Pat out in patties and fry in skillet with a small
amount of cooking oil until golden brown on both sides. Enjoy!
