Coney Sauce

   One of my favorite "fast foods" is a chili dog. I like them covered in coney sauce, sprinkled with chopped onions and smothered in cheese. It's an absolute, fabulous mess - at least three napkins required. When I was a kid, a local burger joint had a signature coney sauce that many of us have memorialized. There are a few people around town who claim to have the recipe. I can't vouch for the original, but I can recommend this sauce. It's easy to do and taste great. Boiling the meat changes the texture and that's part of the secret.

Coney Sauce
Beef and onions.
1 lb. ground chuck
3/4 cup onions, chopped
1 cup water
1 cup ketchup
1 tsp. salt
1/4 tsp. pepper
1-1/2 to 2 T. chili powder

   In 2 quarts sauce pan (not skillet) combine ground meat, water and onions. Let cook until meat is brown and onions are clear. (Do not drain.) Add all other ingredients and bring to boil. Reduce heat and simmer 15-20 minutes.
Sauce simmering.

   Remove from heat and let set for a few minutes. Fold paper towel into fourths and lay on top of sauce to absorb grease. (It may take a few paper towels.) Makes enough to cover 6-8 dogs.

Serve on hot dogs. (Optional toppings - chopped onion and/or sharp cheddar cheese)
