Jalapeno Salsa Burger

   Lately there has been a bounty of peppers and tomatoes coming on. This is the time of year to really get creative in the kitchen. Today we did that. Last night we did Mexican and I tried making Jalapeno Salsa. It was good on tacos, but a bit thin for dipping chips. We used the pico de gallo for that.
   So for lunch I decided to give basic burgers a little kick. I mixed them with the salsa from last night. I added a few bread crumbs in hope of keeping them together. I'm glad I did these on the stove, because they are really moist. The flavor was good and they weren't hot at all. (I've learned to clean those seeds.) But these were the most moist burgers I've ever had - super tender and juicy.


Jalapeno Salsa Burgers
3/4 lb. ground beef
1/4 cup jalapeno salsa
1/4 cup bread crumbs (tear one heel of bread until crumbly if needed)
1 tsp. garlic, minced
1 T. smoky dry rub*
1 tsp. McCormick's hamburger seasoning
salt and pepper
2 slices of onion
2 jalapenos, seeded and diced fine
2 slices cheese (Montery Jack would be good)
2 tomato slices, optional

   In medium bowl, combine beef, salsa, bread crumbs, garlic, dry rub, and seasoning. Form into large patties. In non stick skillet, cook burgers over medium heat. Do not move too much as they are very moist. Flip burgers after about 8 minutes when bottom side is set and slightly charred. Be careful flipping. Add onion slices and jalapenos to the pan. Cook burgers about 5 minutes more. Begin to assemble burgers as pepper and onion finish. Layer cheese on burgers and then top with onions and jalapenos. Put tomato on top if using. Makes 2 big burgers.

Jalapeno Salsa
4 medium tomatoes, cored, seeded and chopped
2 jalapeno peppers, seeded and chopped
2 tsp. lime juice
2 T. cilantro
2 T. olive oil
salt and pepper

Preparation - Combine all ingredients in blender and process until smooth. Let set at least an hour to blend flavors. Makes 1 cup. (mixture is thin)
