Birds in a Nest

    When the kids were little I made an egg "sandwich" for them that was easy and fun. It's like having your eggs and toast all in one. Just cut a circle out of the center of the bread and cook your egg right in the middle. You might want to try this one, too.

Birds in a Nest
1 tsp. butter
1 slice bread
1 egg
salt and pepper
1 slice of cheese (optional)
(per serving)

    Spray nonstick skillet. Spread butter on both sides of bread. Carefully break egg into small bowl, making sure not to break the yolk (to make sure it's good). 
    With a round object, about the size of a medicine cup or some spice lids, cut circle into center of bread, about the size of the yolk.
   Warm skillet to medium high and when skillet is hot, lay bread into skillet, gently pour egg into center of bread (let white spread). Let cook over medium high heat for a couple of minutes, then gently shake pan. Gently flip egg and cook for a few minutes more depending on how hard you like your egg. (With this, only a couple of minutes more is recommended so that the yolk is runny and can soak into the bread.) 
    Lay slice of cheese on top. Slide onto a plate and serve warm.
Note - for children - with tip of knife, make smiley face in the cheese.
