Tis the season of sweets and treats. What better way to get the holiday baking started but by making a batch of divinity. There isn't many ingredients in this homemade candy, but the trick is beating some really stiff egg whites. These little goodies store well for weeks.
2-2/3 cups sugar
2/3 cup light corn syrup
1/2 cup water
2 egg whites
1 tsp. vanilla
2/3 cups nuts
Stir sugar, corn syrup and water over low heat until dissolved. Turn to high and cook without stirring to 260 degrees on thermometer. In mixing bowl, beat egg whites until stiff and continue beating while pouring hot syrup into egg whites in a thin stream. Add vanilla and nuts.
Continue beating until mixture begins to hold its shape. Beat by hand
until it becomes stiff. Drop by teaspoonfuls onto wax paper.
