Buffalo Ranch Popcorn

   Remember the saying "a day late and a dollar short"? That seems to be my motto lately. I just remembered a dish that I forgot to make for Superbowl Sunday - Buffalo Ranch popcorn. 
  I made it for the poker girls as a trial run and it went over big time. I brought home an empty bowl, so I thought it would be a big hit for football food. Ooops! Guess we'll save it for the big game of the Final Four in college hoops. Well, here's a sneak preview.
  The base for this recipe comes from popcorn.org, a website just for popcorn. Substituting the cooking spray for butter is a much healthier way to snack. 

Buffalo Ranch Popcorn
1 T. ranch dressing or dip mix (from a 1 ounce package)
1 T. seafood spice mix (or celery salt)
1 tsp. garlic powder
1 tsp. sugar
1/8 tsp. cayenne pepper
1/4 tsp. vegetable oil
6 quarts popped popcorn
Cooking spray (or melted butter)

  In a small bowl, combine ranch dressing mix, spice mix, garlic powder, sugar and cayenne pepper. Sprinkle dry mix with vegetable oil and stir until well blended.
  Put cooked popcorn in a large bowl and spray lightly with cooking spray (or drizzle with melted butter). Sprinkle seasoning mix over popcorn to taste and toss. Store leftover spice mix in an airtight container.
Makes: about 2 tablespoons (enough for 2-3 batches)
