Smokehouse Baked Beans

   Baked beans are a traditional side on any plate of BBQ. They are easy to do and can be made in quantity. This recipe for beans has an extra "smoked" flavor by adding paprika, cumin and of course, bacon.

Smokehouse baked beans
2-15 oz. or 1-28 oz. can pork and beans
1/2 cup ketchup
1/2 cup BBQ sauce
1/4 cup brown sugar (or 1/8 cup molasses)
1/3 cup onion, finely diced
sprinkle kosher salt
1/2 tsp. black pepper
1 tsp. paprika
1/2 tsp. cumin
2-3 strips bacon, cut in 1-inch pieces

In medium skillet, cook bacon just until done. Set aside on paper towel to drain. In remaining bacon fat, cook onion, sprinkle with salt and stir until onion is tender. With slotted spoon strain onion and mix with all other ingredients in medium mixing bowl.
Pour into sprayed(greased) casserole dish and bake in 350 degree oven for 45-60 minutes. Serves 8-10.

Note-recipe can be cut in half easily or double for a crowd.

Cooking for a crowd
7 lb. pork and beans
1/2 cup cooked bacon, crumbled
1/4 cooked onion
1 cup ketchup
1-3/4 cup BBQ sauce
1 T. paprika
1 tsp. black pepper
1 tsp. salt
1 tsp. cumin


Follow above cooking directions. Slow cookers can be used for heating.
Serves about 45-50.
