Pork Tacos

   When my kids were little, I made a staple of leftovers in a soft shell. It could be ham and cheese, chicken and salsa or sloppy joe leftovers with cheese. Almost anything can go in a soft shell, just like almost anything fits between two pieces of bread. 
   At my house, we eat a lot of pork, so when I saw a recipe for a pork taco, the idea just sounded good. That seemed like a great way to use some leftover pulled pork. 
   I made some pico de gallo to put on the pork since we were out of salsa, layered it in a taco shell and topped it all with shredded cheese. Dinner was done in minutes and the flavors were a good blend.  


Pork Tacos
1 T. vegetable oil
1/2 cup onion, sliced
1 clove garlic, diced
sprinkle of crushed red pepper
2 cups pulled pork (shredded)
pico de gallo or salsa
shredded Mexican cheese blend
lettuce
4 soft taco shells 

Preparation
  In small pan, over medium heat, heat oil and saute' onion, garlic and crushed red pepper for 5 minutes until onion is just tender (watch to not burn garlic). Add shredded pork, stirring well, and cook just to heat meat, about 5 minutes.
  Warm soft shells between two paper towels, in microwave, 30 seconds each side.
  Fill with pork, top with pico de gallo or salsa, layer on lettuce and shredded cheese. Makes 4 tacos
