Anyone who loves seafood has had Old Bay Seasoning. It's a classic pairing with fish and little critters living in the water. I didn't realize how well it goes with other foods, too.
Recently I came upon some extra Old Bay (samples) and read some ideas off the box. Why not? So I tried giving a new twist to a plain old chicken sandwich. Let me say, it's not plain anymore. What a nice little kick.
Ingredients:
4 boneless, skinless chicken breast
1-1/2 T. Old Bay Seasoning (don't add salt)
sprinkle of ground black pepper
4 strips cooked bacon
sliced cheddar cheese (optional)
sliced cheddar cheese (optional)
mayonnaise, onion, lettuce and tomato for topping (optional)
4 ciabatta rolls
Preparation:
Sprinkle chicken lightly with Old Bay and pepper. Grill 7 minutes on each side over direct heat. Toast buns lightly, spread mayo on buns and add toppings. Serves 4.
