Nisbet Inn's Next Best Thing to Robert Redford

   A real piece of Indiana history is the Nisbet Inn, which in November will be a 100 years old! (You've got to being doing something right). They have the second oldest liquor license in the state, next to the Slippery Noodle in Indianapolis.
   Originally a log building built in the 1800's, the "Inn" was built in 1912 and served as a rail stop for the nearby railroad built by the Chinese in 1910. With a smokehouse out back, and German farmers and rail passengers as patrons, the menu of the Nisbet evolved into BBQ entrees and German sides.
   One of the most notable homemade items, is a dessert that came on the menu with the building, the "Next Best Thing to Robert Redford." Owner, Becky Harl updated the name, but claims, "It's just a picnic food." She agreed to share the recipe for "Robert Redford," but it's best to go try out the original first and enjoy a drive through the country to a little piece of history at the Nisbet Inn.

The Next Best Thing to Robert Redford
Ingredients: 
Crust
1 T. sugar
1 cup of flour
1 cup chopped walnuts
1/2 cup melted butter

Filling
8 oz. cream cheese, softened 
1 cup of sugar
2- 8 oz. pkg. cool whip
3 cups milk
6 oz. box of vanilla pudding 
6 oz. box of chocolate pudding

Preparation:
Mix crust ingredients and press into the bottom of 13 X 9 X 2 pan. Bake at 350 for 15 minutes. Cool completely.
Mix softened cream cheese with sugar. Add container of cool whip. Spread on crust.
Mix milk with box of vanilla and chocolate pudding. Spread on cream cheese mixture.
Spread one 8 ounce container of cool whip on top and sprinkle with walnuts. 

Cut into 20 even pieces. Refrigerate until needed.
