Calzones are one of those perfect hand-held sandwiches that can go anywhere and be filled with about anything. This time I had some BBQ chicken leftover and combined it with mozzarella cheese to make an easy dinner.
I do have a recipe to make the dough from scratch, but for a weeknight dinner, using pizza crust is so much easier and faster. These also reheated well, which is not a bad thing.
INGREDIENTS
1 can refrigerated pizza crust
1-1/3 cups barbecue chicken, shredded
1/2 cup shredded mozzarella or Cheddar cheese
DIRECTIONS
Heat oven to 425°F. Lightly spray cookie sheet with cooking spray.
Unroll dough on a cookie sheet. Press out dough into a rectangle. Cut into 4 rectangles. Spoon 1/3 cup chicken onto each half rectangle. Spread within 1/2-inch of edge. Sprinkle cheese over each.
Fold dough in half over filling. Press edges with fork to seal.
Bake 9 to 12 minutes or until light brown.
