Pepperoni Bites

   It's great when the kids send me ideas to try out. My oldest son and his friend sent me a recipe for pepperoni rolls. These are perfect little appetizer pockets that are great finger foods. They also travel and reheat well. That's a huge plus.
   It's also nice that this doesn't take many ingredients and can easily be done in under 30 minutes. It's a good beginner dish that can be done quickly with little fuss.

Pepperoni Bites
1 can Grand flaky biscuits (8 ct), split in half
32 pepperoni slices (2 per biscuit)
16 small slices of cheese (about 1-inch square)
1 tsp. melted or softened butter
Parmesan Cheese
Italian Seasoning
Garlic Powder
1 jar pizza sauce

Directions -
Slice cheese into 16 squares. Split each biscuit in half and then flatten. Layer one pepperoni on biscuit top with cheese and then top with another pepperoni slice. 

Pepperoni bites almost ready to roll for oven.

Gather edges of biscuit and tuck around top, overlapping edges to seal. Place rolls seam side down in a greased pan (baking sheet or greased 13x9).

Brush with butter. Sprinkle with Parmesan cheese, Italian seasoning and garlic
powder. 

Bake at 425 degrees for 16-18 minutes. Serve with warm pizza sauce for dipping.
Makes 16 bites. Recipe can easily be doubled.
