In the Midwest one thing we all like in the summer is tomatoes. We use them in salads, on sandwiches and just sliced fresh on the plate. To add just a slight Italian twist, this marinade, courtesy of Rz Cafe' in Ft. Branch, is a nice new flavor for an old favorite.
Marinated Tomatoes
1/3 cup olive oil
1/4 cup red wine vinegar
2 tsp. parsley flakes
1 tsp. Italian season
1/2 tsp. sugar
1/4 tsp. garlic salt
1/4 tsp. ground pepper
4 large tomatoes cut into wedges
Diced onion and green pepper
Mix first 8 ingredients in bowl. Add tomatoes, onions, and peppers. Toss to coat.
Marinate in fridge for at least 4 hours before serving.
