Strawberry Salad with Balsamic Vinaigrette

  Berry season is here and strawberries are one of my favorites. With the season comes strawberry pies, strawberries in fruit salad and strawberry shortcakes. A few weeks ago I even did a strawberry cheesecake pie. Yum.
    Recently I found some romaine lettuce on sale and paired them with some strawberries that a friend gave me. What an interesting flavor combo. The vinaigrette gave it an unusual flavor without being over powering. 

Strawberry-Basil Salad with Balsamic Vinaigrette
1-1/2 T. olive oil
1-1/2 T.  balsamic vinegar
1/4 tsp. salt
1/8 tsp. freshly ground black pepper
4 cups torn romaine lettuce
1 cup sliced strawberries (1/2 pound)
1/4 cup vertically sliced vidalia or other sweet onion
1/8 cup torn fresh basil

Directions

Combine olive oil, balsamic vinegar, salt, and pepper in a large bowl. Stir well with a whisk. 

Add lettuce, strawberries, onion and basil. Toss to coat. Let chill for about 30 minutes for flavors to blend.

Serves 3.
