Tomato Relish

     The gardens are popping right now, but our tomatoes are not. This year's crop is far from a good one. But they are in season and the time to enjoy them fresh is now.
     For those who have an abundance of tomatoes right now, here's an easy way to make them into a quick side dish. It takes hardly any time to slice, drizzle and sprinkle.

Tomato Relish
Salmon dinner with tomato relish.
3 large ripe tomatoes, sliced
1-2 slices of onion, diced
salt and pepper
drizzle of olive oil
4-5 fresh basil leaves sliced fine ( or 1 tsp. dried basil)
sprinkle of oregano (optional)

In a small plastic container, with a lid, combine all ingredients. 

Let chill, covered in refrigerator for up to 30 minutes to combine flavors. 

Makes 4 servings.
